This morning, my four year old, Talia, asked me to make banana chocolate chip muffins together for breakfast. I love to make my little girl happy but also want to make sure she is also getting the right nutritional value from meals. So my spontaneous decision was to substitute flour with oats. Thankfully she did not notice my substitution while making them and they came out amazingly well. I have to admit, I couldn't skip the chocolate chips! (Don't judge!). Below is the recipe that's four year old approved!
The Recipe:
1/2 cup of softened unsalted butter
2/3 cup brown sugar
2 large eggs (room temperature)
3 very ripe bananas
1 tsp vanilla extract
1 1/2 cups 1-minute oats
1 tsp baking soda
1/2 tsp salt
1 1/2 cup semi-sweet chocolate chips
Makes 12 muffins
Directions:
Preheat the oven to 350 degrees F
Place liners in 12-count muffin tin
Cream together butter, sugar & vanilla
Mix in eggs
Mash bananas with masher or fork
Add to butter and sugar mix
Whisk together oats, baking soda and salt then add to batter
Fold in chocolate chips and scoop batter into muffin tins
